Barbeque Pulled Chicken Sandwiches

I absolutely love making this recipe during the summer months. I tried a pulled pork sandwich at this one local restaurant two years ago. It was a really savoury sandwich, so I wanted to replicate it at home. Unfortunately, my recipe never turned out quite like theirs, so I gave up. Then a couple weeks ago, I had a few chicken breasts sitting in the fridge and I had no clue what to make for lunch. So I decided to try my attempts at a pulled chicken sandwich instead, using the new Kraft Brown Sugar barbeque sauce we bought to try this summer.
Barbecue Pulled Chicken Sandwich

While my intention was to just make a sandwich, I think I accidentally made a really great tasting pulled chicken sandwich! While I had a hard time "shredding" the chicken, I ended up cutting it up by the end, which worked good still! This sandwich is perfect for the summer months, combined with a nice tall cold glass of iced tea and a side of sweet potato fries! Enjoy!
Barbecue Pulled Chicken Sandwich

Barbeque Pulled Chicken Sandwiches
Prep time: 15 min        Cook Time: 30-40 min           Yield: 6 - 8 servings

Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup barbecue sauce (I used Kraft Brown Sugar bbq sauce)
- Salt and pepper
- 6-8 buns (hamburger, kaiser, Hawaiian)
- Lettuce (romaine, iceberg, red leaf, etc)
- 6-8 slices Monterey Jack cheese (or mozzarella, gouda, cheddar, havarti)


Directions
1. Preheat BBQ grill to medium heat.
2. In a medium bowl, combine salt and pepper and 1/2 cup barbeque sauce. Add chicken breasts and ensure they are coated with sauce.
3. Cook chicken on grill until thoroughly cooked, about 15 minutes.
4. Shred chicken. In a frying pan over medium heat, add remaining barbeque sauce. Add shredded chicken and allow the sauce to brown a bit. This adds more flavour to the chicken.
5. Open buns and place cheese on bottom bun. Heat on grill for a bit. Add chicken and top with lettuce.

Variations:
Cook chicken breast using your own method on stove top instead of on barbeque.
Add more barbeque sauce on the top bun for added flavour.

Creamy Chicken Salad Bake

I love this recipe so much. It is such a yummy and tasty dish. I got the recipe once a while ago but have modified it many times to fit my taste...now it is tested to perfection :) I have seen other recipes for chicken salad bake and they top it off with crushed potato chips or bread crumbs. You are welcome to try that alternative or stick with the gooey cheesy topping - your choice! As you can see from the recipe I don't add any additional seasonings like salt or pepper, since the mushroom soup and mayonnaise are already packed with lots of taste and flavour...you don't want to over-do it! Sometimes working with the ingredients you have will release their own true flavours! Enjoy!

Creamy Chicken Salad Bake


Creamy Chicken Salad Bake
Prep time: 15 min        Cook Time: 30 min           Yield: 8 servings

Ingredients
- 2 tbsp olive oil
- 1 medium onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 1/2 cup frozen green peas
- 2 cups chicken breast, cooked and cubed
- 1/2 cup mayonnaise
- 1 can cream of mushroom soup
- 2 cups pasta, cooked and drained (penne, spiral, large shell, small shell, etc.)
- 1 cup shredded cheese

Directions
1. Preheat oven to 350˚F. Grease a 13x9-inch baking dish.
2. Heat olive oil in a deep pan or pot. Add onion and cook until translucent, about 4 minutes. Add carrots and celery and cook until they begin to soften, about 5 minutes. Stir in the green peas and cook for 3 more minutes.
3. Add cubed chicken breast, mayonnaise, mushroom soup and pasta. Stir to combine well.
4. Pour mixture into greased baking dish. Coat with shredded cheese. Bake, covered with aluminum foil, for 20-25 minutes. 

Variations:
For a different topping, toss 1 cup soft bread crumbs with 1 tbsp melted butter and sprinkle over chicken mixture before baking.

Creamy Tomato Basil Spaghetti

Happy Friday! It's finally the end of the work week and the beginning of another great weekend. This week was super busy for us, since we are working on our bathroom renovation. It has been a slow-going project since the house is old, the plumbing is old, and things needed to be updated to standards. And therefore I haven't had the time to really cook or bake. We ate out a couple times, ate left-overs from the weekend, and made a frozen pizza one night. Needless to say, this recipe was from the weekend. It is a yummy and filling recipe that uses the new "Philadelphia Cooking Creme". I substituted regular pasta sauce with this cooking creme, and added a bit more mozzarella cheese to make it cheesier (I love cheese!). Have a great weekend! Creamy Tomato Basil Spaghetti
Prep time: 15 mins        Cook Time: 25 min           Yield: 4 servings

Ingredients
- 2 tbsp olive oil
- 1 medium onion, finely diced
- 3 cloves garlic, minced
- 1 tomato, diced
- 1 tub Philadelphia Cooking Creme, Tomato and Basil flavour
- Mozzarella cheese, grated
- Salt and pepper to taste
- 1 chicken breast, cooked and cubed (optional)
- 1 tsp basil

Directions
1. Cook pasta according to package directions in a large saucepan. Drain once cooked. Leave pasta in saucepan.
2. Heat oil in medium skillet. Add onions and garlic and saute to allow flavours to mix together, about 3 minutes. Add cooking creme and stir, allowing the creme to melt into a smooth sauce. Season to taste with salt and pepper. Remove from heat.
3. Add sauce mixture to pasta. Stir until well combined. Add chicken and tomato. Garnish with mozzarella and basil. Serve immediately.

Variations:
Use bacon instead of chicken.
Add mushrooms and/or broccoli for more flavour.

Asian Inspired Stir Fry

The hubby and I both love Chinese food. We make a date once a month and go to our favourite Chinese restaurant. Aside from the ginger chicken and mushroom fried rice, we make sure to get their shanghai noodles. We were so inspired by their stir fry noodles that we decided to make them at home and try out our Asian cooking skills! With so many different recipes online, we decided to modify them to our liking and make this dish to our taste. And I will share with you our version of this popular Asian classic. We couldn't find shanghai noodles anywhere, so we chose chow mein noodles instead. They are still thin and very yummy! We love to add a lot of spice to the dish, so we tend to add a couple extra teaspoons of chili flakes. Enjoy!

Chow Mein Stir Fry

Chow Mein Stir Fry
Prep time: 30 min        Cook Time: 30 min           Yield: 2-4 servings

Ingredients
- 4 cups chow mein noodles
- 4 green onions, diced
- 1 bunch asparagus, cut into 1" pieces
- 1 pkg. (225 g.) mushrooms, cleaned and sliced
- 1 lb boneless, skinless chicken breast, cubed
- 1 tsp garlic powder
- 1 tsp crushed chilis (or chili powder)
- 1 tsp Herbes de Provence
- 3 tbsp soy sauce
- 1 tbsp vegetable oil
- Chopped cashews or peanuts for garnish


Directions
1. In a medium bowl, toss the chicken cubes with the garlic powder, chili flakes, salt, pepper and 1 tbsp soy sauce. Allow to marinade for 30 minutes.
2. Meanwhile, heat the oil until hot over medium-high heat. Add the mushrooms and sautee until almost done. Season with Herbes de Provence and add asparagus and onions. Sautee a bit longer until the asparagus is done, about 5 minutes.
3. As the vegetables are sauteeing, cook the chicken in a frying pan until chicken cubes are cooked through, about 5-7 minutes. Add to vegetables and stir to combine. Turn off heat.
4. Cook chow mein noodles according to package. Drain. Add vegetables and chicken to noodles. Add remaining 2 tbsp of soy sauce. Stir until well combined. You may add more soy sauce, depending on what your taste preference is. I tend to add enough to turn the chow mein noodles a light brown colour. This is how I know they are seasoned enough.
5. Serve topped with chopped cashews or peanuts.

Variations:
Use rice noodles instead of chow mein noodles, or omit them completely for a yummy chicken stir fry.
Add/replace veggies with other kinds, like broccoli, red pepper, green beans, bean sprouts, carrots.

For extra heat, add 1-2 tsp of chili flakes to the chicken or sprinkle the finished product with chili flakes.

Hello all! Thanks for stopping by today! This week was a really busy week for me (hint hint: we are starting on the bathroom soon!), so I really didn't have time to post as much as I wanted. However, last night I made these and they were so yummy! Serve with a salad or potatoes and you are set! Enjoy and see you all next week!

Mozzarella Crusted Chicken Bake
Prep time: 20 min        Cook Time: 35-45 min           Yield: 4 servings

Ingredients
- 1 lb. chicken breast, cut into strips
- 1/3 cup mayonnaise
- 1/4 cup cheese of your choice (mozzarella, parmesean)
- 1/3 cup seasoned dry bread crumbs

Directions
1. Preheat oven to 425°F. Grease baking sheet.
2. In a wide bowl, combine mayonnaise and cheese. In a separate wide bowl, add dry bread crumbs.
3. Dip chicken strips in the mayonnaise mixture, coating both sides evenly. Transfer to the bread crumbs bowl and coat each strip evenly on both sides.
4. Place chicken strips in the baking sheet. Bake for 35-45 minutes, or until chicken is cooked and crust is golden yellow.

Tip:
To make the breading stick to the chicken, roll the chicken into the flour to coat before rolling in your wet mixture. This will allow the wet mixture to stick to something so it doesn't fall off during baking or frying!

Variations:
Use 1/3 cup ranch or Caesar dressing.
Alternatively, dip strips in a whisked egg mixture of your favourite spices (salt, pepper, chilli powder, seasoned salt, etc.)
Use flour instead of bread crumbs.
For more crunch, mix bread crumbs with crushed corn flakes or rice crispies cereal.

Happy Friday to you all! Yay it's finally the weekend :) I have a yummy and EASY recipe for you today. If you are in a hurry to make anything, or even if you really don't want to cook tonight but kind of have to (yeah I know that feeling!) then give this recipe a try! It will be one of the easiest and quickest you have ever made (no, microwave KD does NOT count!!). So let me know what you all think if you do end up trying this recipe! Mushroom and Cheese Chicken Bake
Prep time: 15 min        Cook Time: 30 min           Yield: 4 servings

Ingredients
- 4 boneless, skinless chicken breasts
- 1 pkg. chicken stuffing mix
- 1 can mushroom soup
- 1 1/2 cup shredded cheese (mozzarella, Parmesan
- 1 tbsp. Extra Virgin Olive oil


Directions
1. Preheat oven to 400°F.
2. In a large pot, prepare stuffing mix as directed on package. Mix in mushroom soup from the can, adding about 1/2 can of water to the mix. Stir until well combined.
3. Add the olive oil to a 13x9-inch baking. Place chicken in dish. Top soup-stuffing mixture and garnish with cheese.
4. Bake for 40 minutes, or until chicken is cooked. Serve with steamed veggies.
