Happy Friday to you! Today I am going to share my fave quick and delicious dinner recipe. And it's as easy as pie, shepherd's pie that is! This recipe is a modified version of the regular shepherd's pie - instead of the mashed potato topping, I have opted for sliced potatoes instead. Plus with the veggies that are still growing, you can too modify this recipe and add your own veggies.

Yield: 1 pie
- 4 peeled baking potatoes, sliced
- 1lb. ground beef (or pork)
- 1 onion, finely chopped
- 1 red bell pepper, finely chopped
- 1/2 cup chopped carrots
- 1/2 cup green peas
- Seasoned salt to taste
Preheat oven to 375°F.
In large nonstick skillet, fry onions and peppers on medium heat until tender,
about 3 minutes. Add ground beef and stir occasionally. Cook until meat is
browned, about 7 minutes.
Add carrots and peas. Mix well until all
ingredients are combined. Add seasoned salt to taste. Cook until vegetables are
In a greased square baking dish,
pour the meat mixture. Arrange sliced potatoes on the top of the meat mixture.
Sprinkle potatoes with seasoned salt.
Bake for 30-35 minutes or until potatoes are soft and cooked throughout.
